What is Soft-Shell Crab?
Soft-shell crab is a culinary term for crabs that have recently molted their exoskeleton and therefore have soft exteriors. They are removed from the water as soon as they molt, or before any hardening occurs. Catching soft-shelled crabs is extremely time-sensitive because of this, and requires that any caught crabs are immediately kept in climate-controlled areas.
At La Popote, our soft-shelled crab is served as a starter as part of our A La Carte Menu and is cooked in a beautiful squid ink tempura. The outcome is a delicious, fresh and crisp crab that can be broken open to reveal a beautiful, fluffy and light white meat. Our crab is served with a squid ink tempura and fresh guacamole.
