Our Orkney Hand Dived Scallops are completed by a fennel purée, pickled kohlrabi and noilly prat sauce. An absolutely stunning dish, these scallops can be enjoyed as a starter available from our A La Carte menu. This menu also currently features Wagyu Rump Picanha, and Line Caught Cornish Mackerel, amongst others. There are two species of scallop found beneath the waves of Orkney, King Scallops and Queen Scallops. Fresh, understated, and succulent, this dish is available until September, when our menu will change completely, so make sure to get it whilst you can.
It is important to us that our produce is sustainable as possible. As well as being famous for the superiority of their flavour, the ‘hand dived’ nature of our scallops ensure that the selection process is gentler on the environment. The divers ensure they only collect the scallops that are ready to eat, leaving the smaller ones to grow, meaning there is no waste or bycatch. Moreover, diving reduces the risk of damage to the scallop itself, as well as the environment, which often occurs is they are dredged.
